Short answer. A cancellation confirmation says the subscription has ended, when it ended and that no further payments will be taken. Send it within 24 hours of an online cancellation. Copy the example and fill in the brackets.

We have cancelled your [plan name] subscription. You asked us to cancel on [date] at [time].
Your subscription ended on [end date]. We will not take any more payments.

Keep a record
Store the cancellation request and the time this email was sent. That is your dated proof.
